Each season has its own fruit and vegetable protagonist and spring connects to strawberries, zucchini and peas! That's why I used them in these delicate and gluten free peas biscuits, for a really special four-legged snack. They are biscuits suitable for everyone, because of their lightness and the use of only three ingredients that we all have at home.

Peas Biscuits: Ingredients for 30 biscuits
- Fresh Peas 140 g
- Rice flour 120 g
- Extravergin Olive oil 15 g
- Fresh mint 3-4 leaves
- Small eggs 1 egg white
To make these peas biscuits you just sbaccellare the indicated amount of peas and blanch for 3-4 minutes in boiling unsalted water. You can definitely use the frozen ones but the taste will be less intense. Once blanched, drain them and blend them still hot, adding also the extra virgin olive oil and mint in leaves: You have to get a smooth puree. Pour it into a bowl and combine the flour and the egg whites, then knead by hand to form a compact dough.
Take small portions of dough at a time and model them in Praline, then arrange them on a drip pan lined with baking paper. You just have to cook the biscuits to the peas, in a static oven preheated at 140 ° for 40 minutes. Ready!
You can store the biscuits to the peas in an airtight container and in the refrigerator for a week, or freeze them once cooked and left cooling completely.
